Thanksgiving is a wonderful time to teach our children gratitude. To be thankful for what they do have in life by teaching them to be helpful and aware of others in need.

This is a wonderful time to teach them the fine art and responsibility of volunteering!

Have them start volunteering now and continue this project straight through out the year. Children for Children in need for one. There are so many ways to accomplish this for example look at your nearest senior center,or perhaps an elderly neighbor they can spend an hour a day with or help with a errand, what ever is age appropriate. The baby boomers are now beginning to enter that stage and we would do well to train our children now to respect seniors as we will be there before we know it. Through this life key they will have hopefully trained their children!

Treat Your Brain and Body Right for Optimum Learning

Tips to help our students achieve

What we put in our mouth can make a difference in how we learn. As our students are growing, we want to make sure they are feeding their brain with healthy foods, doing lots of movement to bring oxygen to the brain, and plenty of sleep to build strong bodies and healthy brains for learning.

The brain has special requirements, so it will be primed for learning. In Sandy Baumann’s book Feed Your Brain for Learning, she shares “What the Brain Needs” in order to function optimally in learning and retrieving information, the brain has at least six major requirements:

1) Water for the passage of electrical impulses – Water is required to carry electrical impulses from sensory organs, such as the eyes and ears, to the brain to be converted into memory and learning. When the body doesn’t get enough water, it gathers water that can be spared from the respiratory tract, the digestive tract, and from the fluid in the joints, which can lead to problems. Drinking water is one of the ways to improve the performance of the brain.

2) Iron to carry oxygen to the brain – Red blood cells need iron to make hemoglobin, molecule that transports oxygen to supply the brain, tissues, and organs in the body.

3) Oxygen and good circulation to provide nutrients to the brain – Oxygen is the most

So, it’s Thanksgiving time again and you are thinking of going away to spend time with your family and friends. I have traveled across the globe with two young children, so I would like to share a few of my tips with you. Whether you are flying or driving to your next destination, you may like to use a few of these tips to make your journey a fun, relaxed and enjoyable journey. Have a safe trip and most importantly... Take time to laugh and have fun with your wonderful children!

1. The Road Trip:
- Have healthy snacks ready at hand, to pass over to the back seat. If you have several children, distribute a variety of healthy snack foods into zip lock bags, so each child has their own snack bag of goodies.
- Mini bags of Carrots or Apples are always great for trips, as they are already prepared, ready to go. You can pop those into a small cooler bag, with frozen bottles of water. Try and pick healthy snacks that are low in sugar, so your kids will be calmer on the road trip.
- Pack Water Bottles, with a non spill lid, to avoid the dreaded spillage in your car.

Games to play
> "Spot the black car, Nissan, Stop Sign etc"
> "I spy with my little eye, something beginning with..."
> Have a music CD in the car that you can all sing along to. The library is a good source.
> Pack a Frisbee in the trunk so you can have a quick run around with the kids at your next stop.

> Before you get back into the car, play musical chairs so that each person moves to a new seat.

Dr.Sue’s Organic Pumpkin Soup Recipe

This is one of my own recipes which I thought up for Thanksgiving 2 years ago. It can be made for 4 people or up to 8. It is clean and pure and simply delicious. Use smaller amounts for 4 people and full recipe for 8 people.

Ingredients

1 to 1 1/2 cups of fresh or canned Organic Pumpkin

1-2 packages of fresh organic baby carrots

6-10 cups of spring water

Fresh shredded Ginger root to taste

Organic Sea Salt or Himalayan Salt & Cracked pepper to taste to taste

Crème Fraiche (recipe below) to taste

Fresh Organic Pomegranate seeds

In a large soup pot, place water, pumpkin and carrots and bring to a boil. Lower the heat to a simmer and cover until softened about 20 minutes. Simmer for an additional 30 minutes. Add fresh shredded ginger root and salt to taste. Remove from heat and allow to cool slightly.

In divided portions, place about 2 cups of soup and mix in a blender to puree. Return soup mixture to large bowl and place in the refrigerator overnight. Soup can be served warm or chilled with a dollop of crème fraiche and throw in some pomegranates for a tangy and sweet blend of flavors.


Crème Fraiche

When I developed my pumpkin soup recipe 2 years ago on the eve of Thanksgiving, I ran all over town looking for some crème fraiche – none to be found after going to 5 stores. Dejected but not deterred, I bought some heavy cream and buttermilk and made now own!

Ingredients

1 cup pasteurized Organic heavy cream 1 tablespoon Organic Buttermilk

There are two methods for making crème fraiche – both work. One is to blend both ingredients into a Mason jar and cover with plastic wrap. Place in a warm dark place and allow to sit for 24-36 hours. The second method is to heat up the heavy cream to about 40C. Remove from heat and place in a bowl or Mason jar and cover with plastic wrap. Place in a dark warm cupboard and stir mixture every 6-8 hours. Crème fraiche should be ready in 24-36 hours. Enjoy!
